Friday Photo - Last of the pumpkins

We have one pumpkin left over from the Autumn. Any ideas what to make it into?

Great shot Sarah Elizabeth. Lots of character. Hmm, are you sick of pumpkin soup? I like it with some cummin and coriander in it for a bit of a change :)

I added some bacon bits as I was cooking for a confirmed meat-eater (I am too, but I like variety).

You should make beef and rice pumpkin casserole. I actually don't have the recipe (although I am sure it is on-line). Basically, it is ground beef, seasoned rice, pumpkin finely chopped, sesasoning and you cook it inside of the scooped-out pumpkin. It was wonderful (had it at a friend's Halloween party).

Sarah's idea of pumpkin risotto for sure. That sounds so good on this foggy morning in California. Use some pancetta in it too and leeks instead of onion.

I may have to do this for dinner myself but I have no fresh pumpkin like you!

Pumpkin soup or pumpkin pie :) I have a recipe for pumpkin tiramisu and although I was very very sceptical at first, it tasted heavenly.

Sarah, lovely photo - can't say I've ever attempted to make pumpkin pie, but it sounds delish. One thing we do often is a side dish - mashing pumpkin and feta cheese together. Very tasty and simple.

Thanks for all of the recipe ideas. They all sound delicious. Hopefully the pumpkin is big enough to give more than one of them a try.
